Shrimp & Watermelon Salad
Ingredients
Dressing:
4 cups chopped watermelon
2 Tbsp white balsamic vinegar
1 tsp Dijon mustard
1/2 tsp salt, using only a half for dressing
1/2 tsp black pepper, using only half for dressing
1 Tbsp watermelon juice
1 Tbsp extra virgin olive oil
Salad:
Cooking Spray
1 lb Jumbo Shrimp, shelled and deveined
2 cloves of garlic, minced
8 cups of mixed salad greens
1/4 red onion, thinly sliced
1 cup grape or cherry tomatoes
1/2 cup crumbled feta or plain goat cheese (with goat cheese is my favorite)
Directions
1. Combine all dressing ingredients in food processor or blender and process to blend.
2. Heat a large nonstick skillet over medium heart and coat with cooking spray. Add shrimp, 1/4 tsp of salt and 1/4 tsp of black pepper. Saute for three minutes and flip over. Spray with more cooking spray, add garlic and saute two more minutes or until cooked through.
3. Combine lettuce, red onion, melon, tomatoes, cheese and dressing. Divide mixture among four plates and top with shrimp, evenly divided.
